Packed, loose or sifted
Granulated sugar doesn’t squash down much, so sources agree closely: King Arthur Baking lists 198 g a cup and USDA FoodData Central 200 g. The other two depend on how you fill the cup.
- Brown sugar is moist and springy. Packed firmly, a cup weighs about 213 g (USDA lists 220 g). Spooned in loosely, USDA puts it at 145 g. The chart above is for packed brown sugar, so pack it unless the recipe says otherwise.
- Powdered sugar is fine and airy. Spooned in unsifted, a cup is about 113 g (USDA lists 120 g). Sifted first, it drops to about 100 g. If a recipe says “1 cup sifted powdered sugar”, use the sifted figure.

Convert sugar in Plate & Page
Plate & Page’s scaling and conversion guide explains that with Convert Between Volume and Weight turned on, which it is by default, and Metric chosen in Settings, “ingredients with a known density are shown by weight”, using “a bundled reference table of about 450 ingredients”. Ingredients it has no density for are converted only within the same kind of unit, such as cups to millilitres, and never guessed.
Scaling and unit conversion are part of the free edition. The app uses its own reference table, so its figures can differ slightly from the charts on this page.

Common questions
How many grams is 1/2 cup of sugar?
About 99 g of granulated sugar, 107 g of packed brown sugar or 57 g of unsifted powdered sugar. With USDA’s figure for granulated sugar it comes to 100 g.
How many grams is 1 cup of brown sugar?
About 213 g packed, by King Arthur Baking’s chart, or 220 g by USDA FoodData Central. Loosely spooned, without packing, USDA lists 145 g.
Is powdered sugar lighter than granulated sugar?
Yes, by volume. A cup of unsifted powdered sugar weighs about 113 g, compared with about 198 g for granulated sugar, because the fine powder holds more air.
