Cups of flour to grams
A cup of all-purpose flour weighs about 120 g when you spoon it in and level it. Scoop it straight from the bag and the same cup can hold far more, which is why published weights for flour vary so much.
1 cup of all-purpose flour is about 120 g, spooned and leveled. 1/4 cup is about 30 g, 1/3 cup about 40 g and 1/2 cup about 60 g. Bread flour weighs the same by this chart; whole wheat flour is a little lighter, about 113 g a cup.

Why charts say 120 g, 125 g or more
Published figures differ because flour is light and squashable, and sources fill the cup in different ways. King Arthur Baking lists 120 g for a cup of all-purpose flour and USDA FoodData Central lists 125 g. For bread flour the gap is wider: 120 g from King Arthur and 137 g from USDA. For whole wheat flour it’s 113 g and 120 g.
This page uses King Arthur’s figures because its test kitchen measures the spoon-and-level way described below, so the numbers match what you get at home if you measure the same way. King Arthur also notes that a cup of all-purpose flour packed down can hold up to 160 g, a third more than the recipe expects. That is the biggest single source of error when converting flour.
How to measure flour without a scale
King Arthur Baking calls this “fluff, sprinkle and scrape”:
- Fluff. Stir the flour in its bag or tub to loosen it.
- Sprinkle. Spoon it into a dry measuring cup until it overflows. Don’t dip the cup into the flour or tap it to settle.
- Scrape. Sweep the top level with the back of a knife.
With a scale, set the bowl on it, zero it, and add flour to the weight in the chart.

Convert flour in Plate & Page
Plate & Page’s scaling and conversion guide explains that with Convert Between Volume and Weight turned on, which it is by default, and Metric chosen in Settings, “ingredients with a known density are shown by weight”, using “a bundled reference table of about 450 ingredients”. Ingredients it has no density for are converted only within the same kind of unit, such as cups to millilitres, and never guessed.
